Where are you!?
I know you guys haven’t seen a lot of me since December so let me tell you where I’ve been! In December, I graduated with my Bachelors of Science in Nutrition! If you saw my last post for Pain Patate Bread Pudding, you know that immediately after, I took a trip to Haiti! I spent time with my grandparents, my other family, and doing some volunteer work.
Jobs and Internships
After getting home from Haiti, I started applying for dietetic internships and started TWO new jobs. I now work at Mothership Bakery in the kitchen cooking and baking and I also work at Center for Discovery as a Diet Tech where I do the grocery shopping and cooking for people with eating disorders. I am happy with two jobs in the field where I want to be, but what I am happiest about is that I got into a dietetic internship!
I applied to four internships: Bronx VA hospital with a masters at NYU was my first choice, Sodexo Distance with a masters at URI, Long Island University with a masters, and Danbury Hospital as my last choice. Although I really wanted to get into Bronx VA, I got into my last choice, Danbury Hospital. While I definitely was disappointed at first, I remembered how many people go through the application process without getting matched. I was in the 49% of people who did get matched and for that, I was so thankful that I get to continue my education right away and become another step closer to becoming a registered dietitian.
Even though I graduated in December 2016, the ceremony wasn’t until May 13, 2017!
I am beyond thankful for everyone I met along my nutrition journey from Messiah College to University of Saint Joseph. All of my friends and professors were always there to guide me in the right direction. I wouldn’t have these pictures today if it weren’t for all of you.
Now, let me explain my cap! The background is a collage of maps with the verse “Here I am. Send me!” found in Isaiah 6:8. Along the side, I put RD2 followed by a bee trail and a bee at the end of it! (Of course I’m covering it with my finger!) The purpose of my cap was to show where I want to end up at the end of my journey. I want to become an international RD who will go wherever God sends me. Here I am, Lord. Use me and send me according to Your will and purpose.
It doesn’t seem like I’m doing much with my life until I write everything down! So let’s continue! Just two more things!
I entered a contest hosted by Siggi’s Yogurt where 25 winners would have their recipe in the first ever “cooking with Siggi’s” cookbook! I entered in my recipe for Yogurt-Marinated Chipotle Chicken over a Creamy Polenta!
Because of you guys voting for me, my recipe was chosen as one of the 25 to be featured in the new cookbook! While I was waiting to hear back about my recipe, my friend sent me the first recipe I’ve ever written.
It’s so funny to see that even at 5 years old, I was creating recipes!
The last thing that I have been doing is continuing to make cakes for friends and family. Since I’m looking at some of my firsts, we might as well look at one of my first cakes before seeing the ones I’ve been working on lately.
Thank God for all the progress I’ve made! 🙂
So I guess that’s everything that I’ve been doing lately and it’s why I haven’t been posting! But since I am just working now, I will (hopefully) get back on track posting my recipes for you guys! I can’t wait to see what the next couple of years has in store for me!
